Vagabond Soup Recipe

This vegetarian recipe for Vagabond soup is economical, fast and easy to make and extremely nutritious. Non-vegetarians can modify the recipe by adding chopped meat or fish. Vagabond Soup is great for lunch or dinner. Serve it with a tossed salad and a good whole grain bread such as the recipes you will find at Best Bread Recipes.com This soup recipe makes four or five servings. Ingredients 2 med sized ripe tomatoes or one can of stewed tomatoes, chopped 2 cloves of crushed garlic 1 stalk of celery, chopped finely 2 cups peeled and diced yams or sweet potatoes 1 green pepper, chopped (or use red pepper, orange pepper or yellow pepper, or any combination of sweet pepper) 2 cups of chopped onion 1.5 cups cooked or canned chick peas 2 tablespoons of Olive oil 1 teaspoons basil dash of cinnamon dash of cayenne pepper 2 teaspoons of paprika 1 or 2 bay leaves 1 teaspoons Tumeric 1 teaspoon salt 3 cups of water Method To use fresh tomatoes, plunge them briefly into boiling water for a few seconds. Remove them from the water and slip the skins off. Remove the pulp and seeds then chop the pulp. If you are using canned tomatoes, chop them. Using a food processor or a knife, chop the remaining vegetables and mince the garlic. Heat the Olive oil in a large pot or skillet. Add the garlic, onion, celery and yams (or sweet potatoes) and saute for five minutes. Add the salt. Saute for another five minutes. Add the spices and water. Cover and cook over low heat for fifteen minutes. Add the tomato pulp, the chopped green pepper and the chick peas. Cover and simmer until the vegetables are tender. Taste and adjust seasoning accordingly. Variation Although this recipe for Vagabond soup is vegetarian, you can modify it by adding chopped meats or fish. Baked ham (chopped), bulk shrimp meat or strips of white fish are good additions.
