Turkey Soup Recipe

Turkey soup is such a wonderful way to use the bones and the remains of the Thanksgiving turkey. If you're a little tired of turkey by the time the bird has disappeared, you can make this soup and freeze it for later.

This recipe uses the bones from a 12 pound turkey. If you turkey is larger or smaller, adjust ingredients accordingly

Turkey Soup Ingredients

Bones from the turkey, with a little meat left on
8 cups cold water
1/4 cup tomato paste or 1 cup canned tomatoes
1 onion, chopped
1 cup celery, chopped
2 tablespoons of uncooked rice
1 cup noodles, pressed down and broken to measure
1 cup diced carrots
1 cup chopped turkey meat
1 tsp salt
1/2 cup fresh frozen peas

Method

Place the turkey carcass and cold water in a large soup pot, cover and simmer for three hours.

Strain. Remove the bones from the broth. Remove any meat from the bones and add it to the broth. Chill this overnight, then skim off any fat that has hardened on the surface.

Add all remaining ingredients and simmer until everything is cooked. This usually takes about half an hour.

This soup makes an excellent main course. Serve it with a delicious home made bread.
