Recommended Hummus Recipe

Hummus is that delectable dip or spread that originated in the Middle East but has become a current favorite in Western countries. You may know it by one of the many variations of the name, which, according to Wikipedia's Hummus Page includes hamos, houmous, hommos, hommus, hummos, hummous or humus. Hummus is made made from mashed chickpeas (also known as garbanzo bean, Indian pea, ceci bean, bengal gram, Kabuli chana, kadale kaalu, sanaga pappu, shimbra, Kadala), tahine, garlic and spices. Tahine is a paste made from sesame seeds. You can purchase it where Asian foods are sold. There are many recipes for hummus. This one is a favorite in my household. Hummus Ingredients 1 1/2 cups raw chick peas or garbanzo beans 3 medium gloves of garlic, minced 1 1/2 teaspoon of salt juice from two lemons 3/4 cup of tahini black pepper and cayenne pepper to taste optional: minced parsley for garlic optional: Olive oil to thin Method To cook the chickpeas, rinse well, then cover with water and soak overnight. Cook in the water used to soak them, as this water contains nutrients. Cook for about an hour or until they are soft. Drain, cool and mash with a potato masher or a food processor until they have a paste-like texture. Mix the mashed chickpeas with all other ingredients, blending well. If the paste is too thick, add some olive oil to thin as desired. If desired, sprinkled with minced parsley to serve. Hummus is an excellent dip or spread. For a special treat, serve it with these home made flatbread crackers
