Hand Made Chocolate Candy

What better than hand made chocolate candy for your Halloween party? Of course, you really don't have to wait for Halloween to enjoy these sweet treats. Recipe for Hand Made Turtles 54 caramels 2 tablespoons of water 6 ounce of semi-sweet chocolate or chocolate chips 3/4 pound whole pecans Place the caramels and the two tablespoons of water in the top of a double boiler, and cover. Allow the water in the bottom part of the double boiler to boil. Melt the caramels, stirring from time to time. Remove the double boiler from the stove but allow the melted caramels to remain in the top part over the hot water. Butter a baking sheet, or use a non stick sheet. Arrange about 40 clusters of four pecans each. Arrange the pecans to form a turtle shape. To do this, you line two pecans up to form the head and tail, then place the other two at the join, sticking them out to form the turtle's legs. Spoon the melted caramel over the pecan clusters. Cover them, but leave a tiny bit of the head and tail showing Melt the chocolate over hot water. Do not permit the water to boil. Remove the double boiler from the stove and spoon the melted chocolate over the pecan clusters. Use just enough to cover and let it flow down the sides. Serve when cool. Recipe for Chocolate Popcorn Balls 8 cups popped corn 1 1/3 cup pecans 2/3 cup almonds 1 1/3 cup sugar 1 cup margarine or butter 1/2 cup light corn syrup 1 tsp vanilla 1/2 cup chocolate cips In a large bowl, mix the nuts, popcorn and chocolate chips together. In a saucepan, combine the sugar, margarine and corn syrup. Cook for ten or fifteen minutes, stirring all the while. Remove from heat and stir in the vanilla. Pour this over the popcorn mixture slowly, mixing thoroughly. Form popcorn balls and spread them on a tray or bake sheet to dry. Chocolate candy recipes like these are always a hit.
